Cinnamon Roll Pancakes

This morning I made Cinnamon Roll Pancakes with a Cream Cheese Frosting and Sugared Apples...talk about ooey gooey heaven on a plate! Recipe as follows :

Ingriedents:

PANCAKES:
1 pre packaged pancake mix (I like pioneer) made as instructed on package

CINNAMON MIXTURE:
1/2 c. unsalted butter, melted
3/4 c. dark brown sugar, packed
1T. Ground cinnamon

CREAM CHEESE ICING:
4 T. unsalted butter
2 oz. cream cheese
3/4 c. powdered sugar
1/2 t. pure vanilla extract

SUGAR APPLES:
3 Washington apples peeled, cored and sliced
1/2 c. dark brown sugar
1 t. butter

1. Prepare pancake batter as instructed on package
2.In a medium bowl, mix butter, brown sugar and cinnamon. scoop mixture into small zip baggie and set aside.  Consistency should be about like toothpaste.
3. In a med. microwave safe bowl, heat butter and cream cheese until melted. Whisk together until smooth; whisk in powdered sugar and vanilla; set aside
4. In small sauce pan put apples, butter and brown sugar on low temp. allow sugar to melt and cook 10 minutes. Remove from heat and set aside.
5. Heat large non stick skillet to med.- low heat. Spray with a non stick spray. Scoop about 3/4 batten onto the skillet. Snip the corner of your baggie of cinnamon and squeeze a spiral onto each pancake careful to avoid getting too close to the edges.  When bubbles begin to appear on the surface, spray a spatula with non stick spray and flip the pancake.
6. Top pancakes with the cream cheese icing and the sugared apples.
I really hope you enjoy these as much as I did.  If you have any questions or certain recipes you would like to see come to life, please let me know!

Love,
Asia
